Roof Top Mingles!

 I think I’m a stay at home kind of woman as I love the idea of being at home. I don’t mean it in the sense of not having a career (working) but rather in the sense, if I’m not forced to leave the house to go to work/ University I will stay at home!

I  genuinely would rather plan and throw a party, knowing how stressful it will be, over just simply attending one. For instance, the other day I had an event that I was invited to and if it wasn’t for my friend dragging me out of my house forcefully I wouldn’t have gone (At times like that, true friendships come out. Ps. that event was great!). 

Hence, when my friends were thinking of meeting up, I instantly said my house!

My friends and I wanted to have a little cozy gathering to catch up on each other’s lives and so I decided that a rooftop gathering is the best. It will give us the impression we went out but at the same time we are cozy and the best part is, we can be as loud as we want, as long as the neighbors don’t complain.

Setting up:

As I wanted it to be as cozy as possible, I opted for some big pillows and a large duvet (You can use bed sheets and any pillows you have at home, be creative!). I put a small square table in the center for the food. I added a couple of plants (Fake) to give it a more alive look and add some colors.

The Food:

Obviously, the most important thing when you are about to spill your emotions, I got inspired by some Pinterest posts for this part, this is what I made:

  • A Cheese Board –

Simply Buy cheese, veggie, crackers, nuts, jam, and fruit of your choice and place them on a board – as easy as this easy it is a gathering/party winner everyone loved it!

  • Vegetarian Tacos –

All you need for this is some tortillas, 1 cup of cooked rice (I added some paprika, chili flakes, fajita spices before it cooks to infuse it with flavor), 1/2 a cup of spinach leaves, Chopped peppers ( red, green, yellow- 1 of each). 

In a pan heat some oil and fry your tortillas (folded in half) on one side once they start turning reddish turn them to the other side. In a different pan add some olive oil and stir-fry the chopped peppers add a pinch of salt to taste.

Add the rice and stir fried peppers as well as the fresh spinach to your taco shell and add some sriracha sauce on top. You can top up with guacamole and shredded cheddar cheese I didn’t add it as I left my friends to add them for themselves!

  • Guacamole –

In a bowl mix add 2 smashed avocados, 1 chopped tomato, and 1/2 chopped onion. Drizzle a bit of olive oil, salt and 1 lemon on top and mix.

  • Beetroot and pomegranate Hummus

All you need is 1 cup of cooked chickpeas, 1/2 cup of tahini, 1 cup of cooked and chopped beetroot, 1/2 cup of pomegranate, 1 squeezed lemon, 1 tsp of salt. 

In a blender place, all the ingredients and blend until the texture is smooth, according to my friends this was the best hummus they had!

  • A pecan, apple & dates crumbled Pie

This was a favorite I’m not sure if there is a recipe out there like it but I believe I created it. I was bored of the regular pies – apple pie for example- and I wanted to make a new pie that is interesting so I combined different types of pie into one and the result was amazing.  As it was loved a lot, I will write the recipe in a different blog post that will go up tomorrow so keep an eye on that if you wanna know the recipe.

  • A frutti Drink

All you need is some fizzy pineapple drink and fruits of your choice. IMG_3062
