Soft and chewy chocolate chip and macadamia nut Cookies

Getting the perfectly soft cookies can be a struggle, I personally have tried it multiple times before I found the right way. So how to make sure your cookies are soft and chewy? here are some tips that will ensure the next time you bake your favorite type of cookies, they are soft.

Tips:

  1. Try to have a good flour to egg ratio, the more flour you add the stiffer the cookie is. I found that each egg needs only 1 cup of flour.
  2. You can also blend the eggs with sugar first before adding the flour as it ensures the moisture is locked inside your cookie dough mixture which ensures softness.
  3.  Avoid adding too much liquid in your cookie dough mixture as it results in cake-iness rather than softness.
  4.  Bake thick cookies for a shorter time at a high temperature to firm them quickly and minimize spreading. The more spread out, the more space there is for the moisture to evaporate.
  5.  Don’t bake them too long, once the cookie sides are goldish/brown and the center top is pale. The cooked centers will be soft.
  6. Avoid baking at low temperature for long times as that only results in hard cookies.

Here is my favorite cookies recipe:

Ingredients:

  • 1  cups of white sugar
  • 1  cups brown sugar
  • 1 1/2 cups butter, softened
  • 2 teaspoons vanilla
  • 3 eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 to 2 bags chocolate chips (2 to 4 cups)
  • 1 bag of macadamia nuts

Method:

  1. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, and eggs until light and creamy. Mix in the sifted flour and add the baking soda and salt and blend them together. Stir in the chocolate chips and macadamia nuts by hand using a wooden spoon.
  2. Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
  3. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
  4. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before serving.
